How are 3D jelly art cakes made?

Made with gelatin or agar, 3D jelly art cakes are like edible glass paperweights. The floral or nature-based designs are created from the underside of the cakes with specially shaped stainless steel nozzles and syringes. The sweetened opaque colors form intricate petals, leaves, and decorative elements, as seen in this video filmed by Nghi Em and demonstrated by Hein.

According to Atlas Obscura, gelatinas artísticas or gelatinas florales originated in Mexico, but are now popular across Singapore, Malaysia, and Vietnam where they’re called thạch rau câu 3D.
